The summer draws to a close and that means that it’s time to try and cram in all those things that we meant to do, but never got around to actually doing. (No, seriously, I’m going to learn to play that guitar any day now!) One of those things is tubing on the Provo River. There is a wonderful little company that one day said to itself, “You know what would make for a good business plan? A vacant parking lot, several vans and a trailer full of tubes!” and thus High Country Rafting was born.

We’ll meet at the church at 11:30 and head down to the vacant parking lot, where we will fill a van (several vans, if we get enough interest) and go up to the drop off point up the Provo River. From there, it is a two hour trip down the river. The entire experience is alot of fun as well as being pretty relaxing. You should come. And you should let me know so I know how many people to expect.

Here at Capital Church, we have a monthly ministry with the Ronald McDonald House. Every third Saturday, we get together and cook dinner for the folks who stay there. (For more information on the RMcD house, check out their website.)

One of the most difficult parts of this ministry is actually putting together a menu for 30 people that doesn’t break the bank. In the spirit of this, we’re going to put up some lists of food and recipes that scale well cost little.

This week, we’re doing a “Breakfast for Dinner” theme. To put together this dinner you will need:

From Costco:

2 gallons Tropicana orange juice – $10.69

1 gallon Mrs. Butterworths Syrup – $5.45

96 oz. Bisquick Pancake Mix (for pancakes and waffles, recipes on the box) – $4.87

64 oz. Walls Berry Farm Strawberry Preserves – $4.38

5 dozen eggs – $6.29

two 6 lb bags Spectrum Blend Mixed Fruit – $17.50

one 3 lb box RusEttes Shredded Hash Browns – $6.49

one 4 lb bag Tyson Sausage Patties – $9.99

4 lb Kirkland Bacon – $9.59

From a local grocery store:

8 oz shredded cheddar cheese (for eggs and hash browns) – $2.99

1 gallon 2% milk – $3.49

1 lb butter – $3.99

Total grocery bill: $88.27 ($2.94 per person)

Required Recipes

Most everything you need can be found on the items purchased (pancakes, waffle and biscuit recipes are on the Bisquick box, instructions for the hashbrowns are on the hashbrowns box). You’ll need probably a cup or so of oil… we’re just using what they have in the cubbards at R.McD but you can tack on another dollar or so if you need it.
